Ingredients

Adjust Servings:
2 cups Fenugreek leaves (Methi leaves)
1 cup boiled Green peas (Hara Matar)
6-7 Cashew Nuts
1 Onion
1/2 inch piece Ginger
3 Green chilli
1 inch piece Cinnamon (Dalchini)
2 Bay Leaf (Tej Patta)
1 pod of Cardamom (Hari Elaichi)
3 Clove (Laung)
1 cup Fresh Cream
1 tsp Sugar
Salt
1/4 cup Oil

    Methi Matar Malai is a delicious north Indian dish which is very popular. Its a delicious combo of Methi leaves and green peas cooked down in a creamy slightly sweet gravy. Eat it with a chapati, naan or rice it goes well with all of it. In case you are wondering its also very easy to make!

    Steps

    Grind together onion, ginger and green chilli. Remove onion puree from mixer jar and grind cashew nuts in the same jar with 1 tbsp of water.

    In a wok or deep bottomed pan heat 4-5 tbsp of oil and add cinnamon, bay leaf, clove and cardamom to it. (Remember to lightly smash the cardamom pod before adding so as to release its flavours better)

    Fry for a min 1 and add onion-chilli puree and saute on medium flame until the onion turns nicely golden brown. Keep stirring in between.

    Add the cashew paste and stir well, cook for 1 min and add Methi leaves. Cook well for 5 mins and add the boiled green peas and salt. Mix well.

    Add cream and sugar at this point. Mix well, cover and cook for about 7-8 mins or until desired consistency is achieved (you could add a little milk if you want your gravy to be a little thinner)

    Note : Try removing all the khada garam masala from the gravy before serving.
